Churro Rice Krispy Treats

So I feel like moms get a bad rap for driving, The other day I was driving the family home. I pulled up to a red light and during the lull began gathering up the scattered sippy cups in my car and shoving them into my diaper bag. My husband sitting shotgun loudly exclaimed, "That's such a mom move! You pull up to a red light and immediately start getting distracted multitasking!"

Um, hello, there are 3 human beings in my car that need me for pretty much every thing besides breathing, of course I'm distracted! 

Now to be clear, I don't endorse multitasking while driving of course. I never text and drive, talk and drive, put on makeup and drive (who has time for makeup?)... But there are times when you have no control over the situation. Honestly.

Today, for example, I was driving home from a playgroup with my kids. In that 15 minutes: 
-Child A managed to wrap a hair tie around her finger so tight it was cutting off circulation and she was screaming "Help Mommy! Get it off, get it off!" 
-Child B somehow snuck one of Child A's apple slices and began serious gagging on the peel. 
-Child C was on a screaming rampage the entire drive because his shade was up and the sun was in his eyes.

Wouldn't you be a little distracted too?

Anyhoo, obviously I need a support group or something.

Or maybe just these Churro Rice Krispy Treats, I'm not even sure if these things were fully cooled in the pan before they were gone today. The brown sugar gives it this caramelly deliciousness that is oh so good. Then the signature cinnamon sugar topping makes it truly an authentic churro (well... kinda authentic :). At any rate these things are delicious and easy. Can life get better?

Churro Rice Krispy Treats



Churro Rice Krispy Treats
Yield: 9-12 servings | Total Time: 30 minutes
  • 6 Tbsp butter
  • 6 Tbsp packed brown sugar
  • 6 cups marshmallows
  • 1 tsp vanilla extract
  • 6 cups rice krispies
  • 1/4 cup sugar
  • 1 Tbsp cinnamon

1.) Pour the rice krispies in a bowl and set aside. Melt the butter in a saucepan over medium heat. Add the brown sugar and stir together until the sugar begins dissolving (about 3-4 min) Turn the heat down to low and add the marshmallows. Continuing stirring until mostly all melted, then add in the vanilla extract.

2.) Once fully melted, take off heat and pour over the rice krispies. Stir lightly to combine. Dump into a lightly greased 9x9 pan and let sit 5 minutes. Then go and light press into the pan with greased hands. Meanwhile mix together the cinnamon and sugar. Once your treats are fully set, cut into squares, rectangles, churro shapes, whichever you prefer... and roll them in your cinnamon sugar mixture so all sides are lightly coated. Yumo - enjoy!

  1. Organic Rice is a whole grain food, with only the inedible outer hull of the round grain rice kernel removed, retaining the bran and germ and thus its many nutrients.
